A quiet dining room in Zagreb’s Upper Town. Croatia, cooked slowly — and over fire.

The kitchen

We cook Croatia slowly — truffle from the Istrian hills , pašticada braised the Dalmatian way, bread and pizza from a wood fire — and leave enough quiet around the table to taste it.

Inside the kitchen

Fire, flour, patience.

Hands cutting proofed dough balls in a tray

The dough rests

Flour from Slavonian mills, water, salt and a little of yesterday’s starter. Two days in the cold before it ever sees the oven.

A wood-fired oven glowing, pizzas baking inside

Wood, never gas

Beech and oak from Gorski kotar. The oven is lit at noon and still glowing when the last guest leaves.

Out of the fire

Blistered at the edge, soft in the middle, finished at the pass with what the morning brought — burrata, pršut, a shaving of truffle.

Seats, and no more

A small room means the kitchen cooks for each table, not for a queue. Nothing is plated ahead; nothing waits under a lamp.

Three regions, one table

Fuži, black truffle

Istria

Fuži, black truffle

In autumn the truffle hunters of the Mirna valley send us whatever the dogs found that week. We shave it at the table, over pasta rolled by hand that morning.

Dalmatia

Pašticada

Two days in wine and vinegar, six hours in the pot with prošek and dried plums. The recipe came from a grandmother in Split; the patience is ours.

The Adriatic

Tuna, raw

Line-caught off Vis and cut to order, dressed with little more than Istrian oil and a few capers picked from island walls.

Octopus under the peka

Signature

Octopus under the peka

“On the menu since the first night. It will be on the menu on the last.”

Potato, rosemary, red onion. Prepared for two or more.

The menu

Short, seasonal, rewritten when the market changes.

Evenings at Tišina

A ground-floor room on Opatička Street, a few minutes’ walk from St Mark’s Square. Linen on the tables, one window onto the street, and no music loud enough to compete with conversation.

  • Candles lit at half past six
  • Plavac mali from Pelješac
  • Tomatoes from the Neretva valley
  • The dining room at dusk
  • Linen, pressed every morning
  • Panna cotta with wild berries from Medvednica
